A warm Irish welcome awaits your arrival at the Cottages with hot, fresh from the oven scones with homemade jam.

After much demand, Liz has made her famous scone recipe available so you can bake the scones at home.

Liz’s Scone Recipe

  • 1lb plain flour
  • 3oz granulated white sugar
  • 4fl oz sunflower oil/ or 4 tablespoons.
  • 1 level teaspoon of bicarbonate of soda (important only a level one!)
  • 1 teaspoon salt
  • Buttermilk to mix.

Pre heat your oven to 190° degrees.

Sift all the dry ingredients together, add buttermilk, sunflower oil and mix lightly to a dough ball consistency.  I use a hard spatula to bring the mixture together so as to minimise handling this helps to keep the scones nice and light.  Knead lightly on a pastry board just to pull the mixture together. Pastry cut and place on a flat baking tray.  Bake for 30 minutes.  Put on a wire rack and leave to rest/cool for 10 minutes.  This recipe will make around 10 large scones.

Serve hot with butter and your favourite yummy jam or jelly.

Enjoy! – but beware Girls they sit well on the hips!

Hot Tip –  If you use coarse stone ground brown whole meal flour and leave out the sugar this recipe can be used to make delicious Irish Brown Soda Bread, add seeds for nutty bite.

Perfect with smoked salmon.
